Ma Tai Soo (Water chestnut and pork pastry)

Ma Tai means water chestnut in Cantonese Chinese and Soo refers to a flaky pastry that covers the filling. One of the best ma tai soo was sold in Chinatown at the popular Char Hung Sut (CHS) restaurant, now shuttered. The outside pastry was strong and could hold a flavorful mix of sweet char siu meat, mushrooms and vegetables. Here is our attempt to imitate the memorable dim sum of CHS. Two types of doughs are combined to create the flaky layers. These are easily frozen after baking so you can always have some for serving when needed. Yum Yum Cha; Let’s East Dim Sum in Hawaii is scheduled to be available early December, 2021.
