Pea Salad

This salad is still a Thanksgiving tradition at our house. My mother, Lorna Lee Lo, claims the popularity is because bacon is included and the peas are crunchy because you do not cook them; just defrost. It reminds many of the Broadway pea salad served at Seattle-based restaurants (Horatio’s, Kincaid’s and Ryan’s Grill) that were once in Hawaii. One of the most popular mayonnaise brands in Hawaii is Best Foods; you may know it as Hellmann’s east of the Mississippi River. Recipe is in Back in the Day cookbook.
